for 1-2 servings

15-ounce can chickpeas

1/4 cup bell pepper, diced

1/4 cup English cucumber, chopped

1/2 tablespoon olive oil

1/2 tablespoon red wine vinegar

1/2 teaspoon paprika

salt and pepper to taste


  1. Drain and rinse the chickpeas.
  2. Dice the bell pepper. Chop the cucumber.
  3. In a bowl, mix together all ingredients.
  4. Taste and add salt as desired.
  5. Enjoy!
